Harvest late December or January.
Prepare a mound of rich moist soil containing plenty of good compost or rotted animal manure in full sun. Plant in the top of the mound. It can be grown in a large container. Water well and deeply to maintain production. Cease watering when leaves start to turn yellow. Harvest once the top growth has begun to die back.
After harvesting, remove soil and hang to dry out – this can take a couple of weeks. Rotate planting location each year to deter rust.
